Dry tortillas

Dry tortillas

Corn tortillas want to loose their moisture, they will do everything the can to be dry so it is your job to not let them because a dry cold tortilla is a tortilla only good for soup or frying. I mean, people in Mexico that dry their tortillas under the sun; like in the photo of this post, they do it in preparation to fry them ans served them as "totopos" (cornchips).

The drying process makes them lighter and crunchier when fried, but if I were you, I would wait for the tortillas to be close to the 10 days in my fridge in my fridge before I rush out and purposefully letting my tortillas dry out.

Where was I? oh, yes! keep your tortillas from drying out, in an air tight container or a zip bag as leaving the in paper or fabric will prevent them from sweating and becoming soggy while they are hot but once they have cooled down the paper or fabric will continue to absorb moisture making your tortillas dry.
