Carne asada and pineapple salsa

Carne asada is marinated meat cooked on the BBQ or skillet.
This is not a recipe but more of a suggestion so I will need to adjust the quantities and the finer details of the ingredients to suit you personal preferences.
INGREDIENTS
Beef Sirloin (100-200g per person) [Vegan alternative is mushrooms or tofu.]
Citrus juice (limes, lemon or orange)
Green onion (chopped)
Garlic (chopped)
Olive oil
Salt
Put it all together to marinate in a zip bag so you can massage it before letting rest the meat in the fridge overnight (4 hours min.)
Cook on high heat or the BBQ or skillet for about 5 minute on each side until it has a nice brown crust but is slightly pink inside (depending on the thickness and personal preference) adjust timings for meat alternatives.
Cover and rest while you heat up corn tortillas on the brownings or resting juice, 5-10 seconds each side, the first tortillas will be the best but if you add a few drops of water the other tortillas will also be nice and full of flavour, adding a bit of oil is another option to give a wee oomph to the tortilla texture.
Pineapple Salsa
2 cups diced fresh pineapple
¼ cup diced red onion
½ jalapeño pepper, diced
Juice and zest of 1 lime or other citrus
½ cup chopped fresh coriander (optional but recommend)
1 garlic minced or finely chopped
¼ teaspoon salt to taste
Mix it all in a bowl and keep in the fridge until ready to eat.
